Tofu salad is huge for us.

It's a meal, it's a snack, it's a side dish, it's a potluck favorite. 

1 lb. mashed firm tofu

4 Tbsp. Veganaise

4 Tbsp. pickle juice

1 cup lettuce, chopped

1/4 cup green pepper, diced

1/2 cup celery, diced

1/4 tsp. salt

1 tsp. Bragg Liquid Aminos

2 Tbsp. nutritional yeast flakes

Combine all ingredients in a medium bowl and enjoy.

It's tangy and salty and spicy.

We love it. Try it on a tofu scramble soft taco, piled on your rice and beans or simply scoop it up with a chip. 

2 cups tomato, diced

1 cup onion, diced

2 tsp. fresh jalapeño, minced

1/4 cup cilantro, minced

1/2 tsp. Himalayan pink salt

1/4 cup lime juice

Combine all ingredients in a medium bowl and enjoy.

Granny's Chocolate Mousse Pie

Try it you might love it. 

Pie Crust: 1 ready made graham cracker

Pie Crust Filling:

3/4 lb. silken tofu

1 9 oz. bag chocolate chips

1/4 cup vanilla soymilk

2 Tbsp. monk fruit sugar

1 tsp. vanilla

Blend all ingredients until smooth and pour into the ready made pie crust.

Whipped Cream

1/4 cup monk fruit sugar

1/4 lb. silken tofu

3/4 cup canola oil

1/4 cup vanilla soy milk

1 tsp. vanilla

Blend all ingredients and then once it thickens our on top of the chocolate filling and refrigerate minimum 2 hours.
